Crumbled feta cheese, pecan halves, and dill to garnish
Instructions
In a medium mixing bowl, combine pecans, chicken, chopped celery, green apple, shallots and cranberries.
In a separate small bowl, mix chopped dill, honey, mayonnaise, stone-ground mustard, and apple cider vinegar. Drizzle the dressing over the chicken mixture and toss until well-coated. Season with salt and pepper to taste.
To serve as an appetizer, place a tablespoon of chicken salad on top of your favorite crackers, then top each with crumbled feta cheese, a pecan half, and dill.
To serve buffet style, place chicken salad in a serving bowl. Chop remaining pecans and sprinkle across the top. Repeat with the feta cheese. Finish with a light dusting of dill.
